Banana Chocolate Chip Muffins
Delicious way to use those ripe bananas. Definitely a crowd pleaser.

Ingredients:
4-5 large, ripe bananas
1/2 cup butter, melted
3/4 cup sugar
2 tsp vanilla
1 tsp baking soda
1 egg
1/4 tsp salt
1 1/2 cups flour
1/4 cup chocolate chips
Directions:

In a large bowl, mash bananas and pour in melted butter. Mix.
Add sugar, egg, vanilla, baking soda, and salt. Mix thoroughly.
Add flour and chocolate chips and blend in.
Spoon into mini-muffin pan and bake for 15 minutes. Enjoy!
Makes 48 mini-muffins.




I would definitely not call myself a baker, sticking to a recipe to the letter is tough for me. I like to measure the ingredients with my heart.. especially garlic, cream cheese, or vodka. These muffins are an exception. They're so easy to throw together and they're a staple in our house. No mixer needed for this recipe! I just use a fork. (My mother-in-law is shaking her head right now, she loves her KitchenAid..) These are a perfect grab and go snack when my girls have friends sleep over, or I'll throw some in a Ziplock and send them to work with my husband. I've made these with white chocolate chips as well and they're just as good! Happy baking!
