Chicken Noodle Soup

There is just something about soup that warms up even the coldest of days! Even the pickiest of eaters would be hard pressed to turn down a bowl of chicken noodle soup. This recipe comes together quickly and can even be made using a rotisserie chicken to cut down on cooking time.
Ingredients:
3 small chicken breasts, cooked and diced. *or substitute rotisserie chicken to cut down on cook time.
1 TB olive oil
2 stalks celery, chopped
1 large carrot, peeled and chopped
1 yellow onion, diced
1 TB minced garlic
5 cups chicken broth
1 can cream of celery soup
6oz egg noodles
1 tsp Italian seasoning
1/2 tsp garlic pepper
salt & pepper to taste
Directions:
Drizzle olive oil in large pot and sauté carrots, celery, and onion over medium-high heat.
Add garlic when onion starts to turn translucent, stir in.
Add seasonings and continue to stir for ~1 minute.
Pour in chicken broth, stir in cream of celery soup, and bring to a boil.
Add chicken and egg noodles and return to a boil until noodles are done.
Turn off heat, let cool for 5 minutes or so and serve!
