Chicken Noodle Soup

Hearty, tasty twist on a classic.

There is just something about soup that warms up even the coldest of days! Even the pickiest of eaters would be hard pressed to turn down a bowl of chicken noodle soup. This recipe comes together quickly and can even be made using a rotisserie chicken to cut down on cooking time.

Ingredients:

  • 3 small chicken breasts, cooked and diced. *or substitute rotisserie chicken to cut down on cook time.

  • 1 TB olive oil

  • 2 stalks celery, chopped

  • 1 large carrot, peeled and chopped

  • 1 yellow onion, diced

  • 1 TB minced garlic

  • 5 cups chicken broth

  • 1 can cream of celery soup

  • 6oz egg noodles

  • 1 tsp Italian seasoning

  • 1/2 tsp garlic pepper

  • salt & pepper to taste

Directions:

  • Drizzle olive oil in large pot and sauté carrots, celery, and onion over medium-high heat.

  • Add garlic when onion starts to turn translucent, stir in.

  • Add seasonings and continue to stir for ~1 minute.

  • Pour in chicken broth, stir in cream of celery soup, and bring to a boil.

  • Add chicken and egg noodles and return to a boil until noodles are done.

  • Turn off heat, let cool for 5 minutes or so and serve!
