Chicken Pot Pie

Comfort food at it's finest, and marriage security in my case.

When I think of comfort food, a good chicken pot pie is near the top of my list. Perfect for a cold day when you want to just curl up with a bowl of warm goodness. This recipe happens to be one of my husband's favorites, so I definitely keep it in consistent rotation. Some of you may want to make your pie crusts from scratch, and I commend you! My mother-in-law has perfected her pie crust and I'm thankful my husband doesn't hold my store-bought crust against me.

Ingredients:

  • 2 Chicken breasts, cooked and diced. (You could also use rotisserie chicken!)

  • 1 yellow onion, diced

  • 2 celery stalks, chopped

  • 1/2 cup butter

  • 1/2 cup flour

  • 1 15oz can chicken broth

  • 1/4 cup milk

  • 2 cups frozen peas & carrots mixture

  • 1 package pie crusts

  • garlic salt and pepper to taste

Directions:

  • Preheat oven to 425 degrees.

  • Melt butter in large, deep skillet. Add onions and celery and sauté until tender.

  • Add flour and slowly stir in chicken broth until blended, then slowly stir in milk. Mixture will thicken.

  • Season to taste with garlic salt and pepper.

  • Stir in chicken and peas & carrots and let simmer until heated through.

  • Put one pie crust into pie pan and pour in chicken mixture.

  • Top with other pie crust and pinch sides together all around pie plate.

  • Bake at 425 for 30-35 minutes, depending on your oven.

  • Let cool ~15 minutes and serve!
