Want to shake up your basic dinner routine? Throw this into the mix. This recipe is so easy, but it never fails to impress! If you need to feed 8-10 people or just your family of 4 (with leftovers!), this is for you. These can be served with chips, French fries, or a nice green salad. Really whatever you're in the mood for! So easy to throw in the crockpot in the morning and whip up sandwiches before practice days. Also, I've made these with a beef or pork roast and they're equally delicious. So, if you're trying to save a few dollars, pork shoulder roasts are a little less expensive than beef.

Ingredients:

  • 4-5lb Beef or Pork Roast

  • 2 Au Jus sauce packets (one for roast and one prepared as directed for dipping)

  • 1 Ranch Dip seasoning packet

  • 4-5 sliced banana peppers

  • 1/2 cup (one stick) butter, plus extra to spread on rolls if desired

  • Hoagie rolls

  • Provolone cheese, sliced

Directions:

  • Place roast in crockpot and sprinkle dry ranch seasoning and dry au jus seasoning packets over it evenly.

  • Cut stick of butter into pads and place them on top of the roast evenly.

  • Top with sliced banana peppers.

  • Cook on low 6-8 hours. (Larger roasts take a little longer)

  • When roast is done, shred into bite size pieces.

  • Preheat oven to 350*, butter hoagie rolls, and bake ~5 minutes. *this step is optional, but I like the rolls to have a little crisp to the edges.

  • While rolls are baking, prepare au jus sauce per packet instructions.

  • Spoon shredded meat onto bottom half of each roll, top with a slice of provolone cheese, and put the top of the roll on.

  • Slice sandwiches in half, ladle au jus into ramekins, and serve!

*For a fun twist with leftovers I like to sauté bell peppers and onions and add them to the meat and provolone for a Philly cheesesteak style feel.
