Garden Salsa

Ingredients:

  • 2 cups diced fresh tomatoes (Cherry, Pear, Roma, use your favorites!)

  • 1 15oz can diced tomatoes w/green chiles

  • 2 lemon cucumbers, peeled and diced

  • 3-4 diced jalapeƱos (you can use 4oz. can if fresh are not available)

  • 1 diced onion (I prefer sweet but you can use yellow, white, or red.)

  • 1/4 cup chopped cilantro

  • 1 TB cumin

  • Juice of 1/2 lime, or 1 tsp lime juice

  • Garlic salt and pepper to taste

Fresh salsa is one of my favorite things to make using the bounty of my summer garden. You'll notice this recipe calls for lemon cucumbers, which you may or may not have available to you. You can easily substitute a regular cucumber for this recipe. I haven't tried canning this yet, it's better in small batches, but I may in the future. Be sure to have extra chips on hand, this salsa goes fast!

Directions:

Mix all ingredients together in a bowl. Let chill for at least an hour to let flavors combine for best taste.
