Sausage and Spinach Tortellini Soup
One of my most requested recipes and my youngest daughter's favorite.

Ingredients:
1lb ground breakfast sausage
1 package tortellini, 20oz
6 cups chicken broth (low sodium)
1 cup whole milk
4 stalks celery, chopped
~20 baby carrots, chopped
1 yellow onion, diced
1 TB minced garlic
2 handfuls baby spinach
garlic salt and pepper to taste
Directions:
Brown sausage in large soup pot, remove and set on paper towel lined plate.
Add carrots, celery, and onions to pot and sauté in leftover grease, ~3 minutes.
Add minced garlic and continue sautéing until onions are starting to get translucent.
Pour in chicken broth, bring to a boil, then add milk and sausage.
Return to a low boil over medium heat, add garlic salt and pepper to taste, then add tortellini.
When tortellini is tender, reduce heat to low and stir in spinach until done.
Turn off heat and ladle into bowls to dig in!
