Sausage and Spinach Tortellini Soup

One of my most requested recipes and my youngest daughter's favorite.

Ingredients:

  • 1lb ground breakfast sausage

  • 1 package tortellini, 20oz

  • 6 cups chicken broth (low sodium)

  • 1 cup whole milk

  • 4 stalks celery, chopped

  • ~20 baby carrots, chopped

  • 1 yellow onion, diced

  • 1 TB minced garlic

  • 2 handfuls baby spinach

  • garlic salt and pepper to taste

Directions:

  • Brown sausage in large soup pot, remove and set on paper towel lined plate.

  • Add carrots, celery, and onions to pot and sauté in leftover grease, ~3 minutes.

  • Add minced garlic and continue sautéing until onions are starting to get translucent.

  • Pour in chicken broth, bring to a boil, then add milk and sausage.

  • Return to a low boil over medium heat, add garlic salt and pepper to taste, then add tortellini.

  • When tortellini is tender, reduce heat to low and stir in spinach until done.

  • Turn off heat and ladle into bowls to dig in!

My favorite part about this recipe is you don't end up with a pile of dishes afterward! All the magic happens in one pot. I like to use sage flavored sausage, but any kind will work. The type of milk can also be substituted easily, I've used 2%, whole, or even half & half if I want to make the soup a little creamier. This soup is very versatile, so don't be afraid to add your own spin to it. Enjoy!
